Kolache Dough and Fillings

Ingredients:
2 pkgs. active dry yeast
1/4 c. water (lukewarm)
1/4 c. sugar
2 c. scalded milk
1/2 c. shortening
1 tsp. salt
2 eggs
7-8 c. flour

Directions:
Soak yeast in lukewarm water; let stand.  Scald milk and pour over shortening, sugar and salt.  Cool to lukewarm.  Add about 2 c. flour and beat well.  Add eggs, one at a time.  Add the yeast and beat well.  Add enough flour to make a soft dough.  Leave dough in same bowl, grease top of dough, and let rise in a warm place until double (about 1 hour).  Shape into doughnuts and rounds and press down the centers slightly.  Place filling of choice in the center (about 1-2 Tbsp. filling).  Bake in a 400 degree oven for 12-15 minutes or until golden brown.

Poppy seed kolache filling:
Ingredients:
1 1/2 c. ground poppy seed
2 c. milk
1/2 c. sugar
Pinch of salt
2 Tbsp. flour
1 egg

Directions:
Beat egg and milk and bring to boiling point.  Mix together poppy seed, flour, sugar and salt then add to the boiling milk.  Cook for 2 minutes.  Remove from heat and fill the kolache dough with filling.

Prune, peach or apricot kolache filling:
Ingredients:
2 lbs. dried fruit
Water
1 c. sugar
1 tsp. vanilla
1/4 tsp. cinnamon (optional)

Directions:
Cook fruit in enough water to cover until tender.  Drain and pit (if cooking prunes).  Mash well.  Add sugar, vanilla and cinnamon.  Fill kolache dough with filling.

Cottage cheese kolache filling:
Ingredients:
1 Tbsp. butter
1 lb. dried sweet cottage cheese
2 egg yolks
1/4 c. raisins
1/2 c. sugar
1/4 tsp. salt
1/4 tsp. vanilla or lemon flavoring

Directions:
Cream butter.  Add remaining ingredients.  Dust with cinnamon.  Fill kolache dough with filling.

Pineapple kolache filling:
Ingredients:
1 2/3 cans canned shredded pineapple
1 Tbsp. lemon juice
2 Tbsp. cornstarch
1 egg
1 Tbsp. butter
Few grains of salt

Directions:
Combine ingredients and cook until thick.  Fill kolache dough with filling.

Cherry kolache filling:
Ingredients:
1 can pitted red sour cherries
1 c. sugar
6 Tbsp. cornstarch
1 tsp. red food coloring

Directions:
Drain cherries- reserving the juice.  Combine sugar and cornstarch in pan.  Add cherry juice and food coloring.  Cook, stirring constantly, until thick and clear. Remove from heat and add cherries.  Cool.  Fill kolache dough with filling.
