Ingredients:
6 qts. water
1 Tbsp. chicken base
3 c. eggs
1 c. water
2 tsp. salt
2 tsp. sugar
6 c. flour
Directions:
Bring 6 qts. water and chicken base to a boil. In a bowl, beat eggs with 1 c. water, salt, sugar and flour. Mix until smoothly blended. Drop teaspoons of dough into boiling water and boil for 10 minutes, stirring occasionally. Place kettle on an angle on the sink while running cold water into the kettle until dumplings are cooled. They are now ready to add into the soup.
Note~ This is a restaurant recipe and makes about 100 dumplings.
