Ingredients:
2 c. pancake mix
1 c. milk
1 c. vanilla yogurt
2 eggs
1 tsp. lemon zest
1 c. fresh blueberries
Blueberry or maple syrup for drizzling
Directions:
In a large bowl, combine pancake mix, milk, yogurt, eggs and lemon zest; mix until well-combined. Stir in blueberries
Coat a griddle or skillet with cooking spray. When griddle is hot, pour on 1/4 c. batter per pancake. When bubbles form and edges begin to brown, flip pancakes and brown on other side. Repeat until all batter is used.
Serve immediately with syrup.
