Ingredients:
2 eggs
2 Tbsp. milk
2 Tbsp. shredded cheddar cheese
Salt and pepper to taste
Directions:
Coat a 12 oz. microwave-safe coffee mug with cooking spray. Add eggs and milk; beat until blended.
Microwave for 45 seconds on high power; stir. Microwave 30-45 seconds more, or until eggs are almost set.
Top with cheese, season with salt and pepper. Serve warm.
