Sunday Brunch Bake

Sunday Brunch Bake


Ingredients:
12 large eggs
1/3 c. sour cream
1 lb. pork sausage
1 c. sliced fresh mushrooms
1 onion, chopped
2 tomatoes, chopped
1 pkg. (8 oz.) finely shredded cheddar cheese


Directions:
Beat eggs and sour cream with whisk until blended.  Pour into greased 9x13 baking dish.  Bake 10 minutes or until egg mixture is softly set.  Meanwhile, cook sausage, mushrooms and onions in a large skillet on medium heat for 6-8 minutes or until sausage is done, stirring occasionally.  Drain.


Heat oven to 325 degrees.  Spoon tomatoes over egg layer; cover with sausage mixture and cheese.


Bake 30 minutes or until center is set.
