Morning Glory Muffins

Ingredients:
6 eggs
2 1/2 c. sugar
2 c. oil
4 c. grated carrots
1 c. coconut
1 c. raisins
1 c. chopped nuts
2 c. grated apples
4 tsp. baking soda
1 tsp. salt
4 tsp. cinnamon
4 c. flour

Directions:
Stir all ingredients together.  Make as many muffins as desired.  Bake at 375 degrees for 20 minutes.

Extra batter can keep in the refrigerator for up to 4 weeks.
