Ingredients:
1 c. all-purpose flour
2 Tbsp. brown sugar
2 1/2 tsp. baking powder
1/2 tsp. pumpkin pie spice
1/4 tsp. salt
1 c. fat-free milk
2 Tbsp. canola oil
Maple syrup, optional
Directions:
In a large bowl, combine the flour, brown sugar, baking powder, pie spice and salt. In another bowl, combine milk and oil; stir into dry ingredients just until moistened.
Pour batter by 1/4 cupfuls onto a hot griddle coated with cooking spray; turn when bubbles form on top. Cook until second side is golden brown. Serve with syrup if desired.
