Ingredients:
6 slices precooked bacon
1 (24 oz.) pkg. refrigerated mashed potatoes
1 c. (4 oz.) shredded Monterey Jack cheese with peppers
1 pkg. (8 oz.) cream cheese, cut into cubes
1/2 tsp. salt
1/2 tsp. pepper
3 c. (12 oz.) shredded sharp Cheddar cheese, divided
1 (8 oz.) container sour cream
2 cooked chicken breasts, shredded
1/2 c. barbecue sauce
Instructions:
Crumble bacon and set aside. Preheat oven to 375 degrees.
Stir together mashed potatoes, the next 4 ingredients and 2 cups Cheddar cheese in a large microwave-safe bowl. Microwave, covered, on high for 4 minutes. Stir in sour cream.
Spoon potato mixture into a lightly greased 7x11 baking dish. Arrange chicken evenly over potatoes; drizzle with barbecue sauce. Sprinkle evenly with bacon and remaining 1 c. Cheddar cheese.
Bake 15 minutes or until casserole is thoroughly heated and cheese is melted.
