Lemon Parsley Baked Cod

Lemony Parsley Baked Cod Recipe

Ingredients:
3 Tbsp. minced fresh parsley
2 Tbsp. lemon juice
1 Tbsp. grated lemon peel
1 Tbsp. olive oil
2 garlic cloves, minced
1/4 tsp. salt
1/8 tsp. pepper
4 cod fillets (6 oz. each)
2 green onions, chopped

Directions:
Preheat oven to 400 degrees.  In a small bowl, mix the first 7 ingredients.  Place cod in an ungreased 11x7 baking dish; top with parsley mixture.  Sprinkle with green onions.  Bake, covered, 10-15 minutes or until fish flakes easily with a fork.
