Chicken Parmigiana

Chicken Parmigiana Recipe

Ingredients:
4 boneless skinless chicken breast halves (4 oz. each)
1 can (6 oz.) tomato paste
3/4 c. water
2 garlic cloves, minced
1 Tbsp. dried parsley flakes
1 tsp. salt
1/4 tsp. pepper
1/2 tsp. Italian seasoning
1/2 tsp. dried oregano
1/4 tsp. crushed red pepper flakes, optional
2 c. (8 oz.) shredded mozzarella cheese
1/4 c. grated Parmesan cheese

Directions:
Place the chicken in a greased 8 inch baking dish.  In a saucepan, combine the tomato paste, water, garlic and seasonings; bring to a boil.  Pour over the chicken.  Bake, uncovered, at 400 degrees for 15-20 minutes or until chicken juices run clear.  Sprinkle with cheeses; bake 10 minutes longer or until the cheese is melted.
