Zucchini Bread

Makeover Pineapple Zucchini Bread Recipe

Ingredients:
3 eggs, beaten
2 c. sugar
3 Tbsp. cinnamon
3 Tbsp. vanilla
1 Tbsp. salt
1 c. oil
2 c. shredded zucchini
1/2 c. nuts
3 c. flour
1 Tbsp. baking soda

Directions:
Preheat oven to 350 degrees.  Combine all of the ingredients in a bowl.  Mix thoroughly.  Pour into a greased bread loaf pan.  Bake for 40 minutes.  Remove from the pan and place on a wire cooling rack. 

Note~  This can also be made into muffins but the cooking time will have to be adjusted.
