Zucchini Bread

Ingredients:
3 eggs
1 tsp. salt
1 1/2 c. sugar
1 tsp. baking soda
1 c. vegetable oil
3 c. flour
2 c. grated raw zucchini
1/4 tsp. baking powder
1 Tbsp. vanilla
2 tsp. cinnamon
1 c. chopped nuts (optional)

Directions:
Beat eggs until foamy.  Add sugar, oil, zucchini and vanilla.  Mix well.  Combine dry ingredients and add to egg mixture.  Stir well.  Pour into 2 greased loaf pans.  Bake at 350 degrees for 1 hour.  Cool on a wire rack.
