Ingredients:
1 Tbsp. vegetable oil
1 onion, finely chopped
1 clove garlic, chopped
3 c. shredded skinless cooked chicken from a rotisserie bird
Salt
6 flour tortillas
3 c. shredded iceberg lettuce
3/4 c. tomato salsa
1 1/2 c. shredded Cheddar cheese
Directions:
Warm vegetable oil in a large skillet over medium-high heat. Add onion; saute until softened, about 3 minutes. Add garlic and cook, stirring constantly, 1 minute. Stir in chicken and 1/4 tsp. salt and saute until heated through, 1-2 minutes.
Place tortillas between 2 moistened paper towels; microwave on high for 10 seconds. Divide shredded lettuce evenly among tortillas, followed by chicken, salsa and Cheddar cheese. Roll up burritos, cut in half and serve.
