Ingredients:
1 bag Success rice
Vegetable cooking spray
2 Tbsp. reduced-calorie margarine
1 lb. ground turkey
1 c. chopped onion
1 c. sliced fresh mushrooms
1 clove garlic, minced
2 cans (8 oz.) no-salt-added tomato sauce
1 can (6 oz.) no-salt-added tomato paste
1 tsp. dried oregano leaves, crushed
1 carton (15 oz.) low fat cottage cheese
1/2 c. (2 oz.) grated Parmesan cheese
2 c. (8 oz.) shredded mozzarella cheese
1 Tbsp. dried parsley flakes
Directions:
Prepare rice according to package directions. Preheat oven to 350 degrees.
Spray a 9x13 baking dish with cooking spray; set aside. Melt margarine in a large skillet over medium heat. Add ground turkey, onion, mushrooms and garlic; cook until turkey is no longer pink and vegetables are tender, stirring occasionally to separate turkey. Drain. Stir in tomato sauce, tomato paste and oregano; simmer 15 minutes, stirring occasionally. Layer half each of rice, turkey mixture, cottage cheese, Parmesan cheese and mozzarella cheese in prepared baking dish; repeat layers. Sprinkle with parsley; cover. Bake 30 minutes. Uncover; continue baking 15 minutes.
