Blueberry-Citrus Mini Loaves

Ingredients:
1 c. all-purpose flour
1 c. whole wheat pastry flour
3/4 c. sugar
1/2 tsp. salt
1/2 tsp. baking soda
1 egg
3/4 c. orange juice
1/4 c. canola oil
1 Tbsp. grated orange peel
1/2 c. fresh or frozen blueberries
1/4 c. chopped pecans

Directions:
In a large bowl, combine the flours, sugar, salt and baking soda.  In a small bowl, whisk the egg, orange juce, oil and orange peel.  Stir into dry ingredients just until moistened.  Fold in blueberries and pecans.

Transfer to two 5 3/4x3 inch loaf pans coated with cooking spray.  Bake at 350 degrees for 40-45 minues or until a toothpick inserted near the center comes out clean.  Cool for 10 minues before removing from pans to wire racks.
